I don't really put too much thought in side dishes. I usually just make a salad or roast a bunch of broccoli or green beans and call it a day. But when we want to kick it up a bit I make these salt and vinegar smashed potatoes. Usually with a steak or some kind of baked chicken. My kids love anything salt and vinegar ( their favorite are chicken wings) and these potatoes are inhaled when I make them. They are good cold right out of the refrigerator too!
Salt and Vinegar Smashed Potatoes
2 lbs Small red potatoes
1/2 c Olive oil
Kosher salt
Fresh ground pepper
Fresh rosemary, finely chopped
1/2 c Cider vinegar
1.Preheat oven to 425 degrees and cover a baking sheet with parchment paper.
2.Place potatoes in salted water and bring to a boil; cook until fork tender.
3.Cool the potatoes for a minute or two and place the cooked potatoes on the baking sheet.
4.Press down gently on each potato with a potato masher until smashed a bit and brush the top of each potato with olive oil.
5.Season well with Kosher salt, pepper and rosemary. Place in the oven for 25 minutes until browned and crispy.
6. Remove from oven and brush well with cider vinegar.
7. Add more vinegar or salt to taste.
