Butter Chicken


Up until a few years ago I had never had butter chicken. A friend introduced us to it , as well as rogan josh and my husband and I were hooked on it! I usually add rice and naan bread to this recipe and we have a complete meal. If I am having friends over for dinner I will add a salad and mango sorbet for dessert. This is a slow cooker recipe but I have found that just dumping in the chicken makes it turn out a bit dry so I take the extra step of browning the chicken in a bit of coconut oil before adding it to the sauce. And if you don’t want to use the heavy cream you can use coconut milk or yogurt instead.

Butter Chicken

Ingredients

3lbs boneless, skinless chicken breasts, cut into bite sized pieces
1 T coconut oil
1c chicken broth
1 6oz can tomato paste
2T lemon juice
3-4 garlic cloves, minced ( I use 4)
2 Tgrated ginger
2 tsp ground cinnamon
1 tsp salt
2 tsp ground cumin
1 tsp turmeric
2 tsp garam masala
1/4 c grated onion
4 T butter
2 tsp sugar
1 c heavy cream OR  coconut milk OR plain yogurt

Directions

1. In a skillet on medium heat, add the coconut oil and brown the chicken pieces on all sides, about 5 minutes or so.
2. In a large bowl, combine the chicken broth, tomato paste, lemon juice, minced garlic, grated ginger, cinnamon, salt, ground cumin, turmeric and garam masala. Mix well and add the browned chicken. Mix well in the sauce and transfer it all into a slow cooker.
3. Add in the grated onion, butter and sugar and mix well. 
4. Cook on high for about 3 hours until the chicken is cooked through.
5. Once the chicken is done, add in the heavy cream ( or coconut milk or plain yogurt) and stir well. 
6. Serve hot over rice.
