Easy Peanut Butter Fudge



The easiest fudge to make ! This peanut butter fudge uses just a handful of ingredients and you don’t have to boil or use a candy thermometer. It is very quick to come together. I always us Skippy peanut butter when making this fudge. The first time I ever made this recipe I used natural peanut butter and it didn’t set. I think it was too oily. So try to get regular peanut butter to cut down on the oil content. I like to cut this fudge into small pieces and place them in a container in the freezer and grab one and eat them frozen. They are the perfect consistency that way.

Easy Peanut Butter Fudge
Ingredients
1 cup butter, cut into pieces 
1 cup creamy peanut butter 
1 tsp vanilla extract 
3.5 cups powdered sugar

Directions
1. Line an 8x8 baking dish with aluminum foil and set aside.
2. In a medium microwave safe bowl, add the butter and the peanut butter. Microwave for 30 seconds and stir. If the mixture still has lumps ,microwave in 20 second intervals until all the butter is melted into the peanut butter and the batter is smooth.
3. Add in the vanilla and stir well.
4. Using a whisk , add the powdered sugar about 1/2 cup at a time, mixing well each time to get all the powdered sugar incorporated. The batter will be thick and you may have to switch to a wooden spoon to mix at the end.
5. Press the mixture into the aluminum foil lined baking dish and using the back of a spatula, smooth into an even layer.
6. Refrigerate the fudge for a few hours until set. 
7. Remove the fudge by lifting the aluminum foil out and setting it on the counter. Remove the slab of fudge from the foil to a cutting board and cut into squares. 
8. You can store the fudge in the refrigerator or place it in a lidded container in the freezer.
