Limoncello




This limoncello recipe is one we have been making for years. There is nothing better than sipping on this lemony sweetness on hot summer days. So easy to do, you just have to have patience. It takes 2 to 4 weeks! I always use vodka. I know there are people that say only everclear but to me vodka makes the liqueur much smoother. One note: try to use organic lemons. You don’t want any unnecessary pesticides on your lemon peel. Or wax.

Homemade Limoncello

Ingredients
16-18 organic lemons
1.75 L Vodka (100 Proof)
3 cups water
3 cups granulated sugar

Using a potato peeler, peel the lemons into strips. Try not to get any white pith. It can make your limoncello bitter.
Place the lemon strips in a large container. I use a large ball jar. A pitcher with a lid works well too.
Pour the vodka over the lemon strips, close the container and let it sit in a cool dark space for 3 to 4 weeks. Strain the lemon strips from the alcohol.
After 3-4 weeks make a simple syrup. In a saucepan add the water and sugar and heat on medium heat until all of the sugar is dissolved. Let this cool completely.
Add the simple syrup to the lemon alcohol and stir well.
Place in bottles or jars.
I freeze the bottles and take them out as I need them.
